I'd sooner not go to Disney if I couldn't hop from park to park.
Maybe it's adult ADD, but I get bored after about 4 hours no matter what park I'm in.
Additionally, I feel like having the park hoper option gives you more for your money in the long run. For instance, if you're spending the day in Animal Kingdom, and that park closes at 5:00, if you have a park hoper, you can hop over to a park staying open later, thus giving you more park hours for the day.
Especially if you're staying on property, park hoper plus EMH really maximize your time in the parks.
Plus it's just great to have that flexibility. Sometimes you might be one place and just get the urge to ride something one more time at another park.
