They look ok to me. I may consider tossing Jiko in there for Yak & Yeti dinner, mostly to burn up the extra DxDDP credit you may have, but it's not that big of a deal. Having 1 unspent DxDDP credit over 5 nights isn't going to kill your savings (heck, I was originally planning on having 4 left over for 9 nights and was still coming out quite ahead).

However, I notice the early snacks always at the resort's food court. Roughly what time is this looking at? If it's after 9am or so, I'd suggest you look into the various bakeries at the parks (Main St. (MK), Norway, France, and Starring Rolls (DHS)). The offerings here are great (well, I can vouch for Main St. and the others in another month or so :p) and it'd get you into the parks close to opening which would benefit touring quite a bit (the earlier the better in this case, since crowds will start to pick up in the late morning).

Now, of the restaurants you list, I've been to Sci-Fi, Tusker, and Crystal Palace within the past 2 years. All 3 were good. CP was breakfast, so a bit different than the lunch you have planned, but the interaction is great here. Do be aware that they often run behind schedule though as it's a very popular place. Tusker was just alright for lunch when I went, but it was also before it had characters (for lunch). The food was good, and nicely different than typical, but with enough "normal" stuff to still be safe. Sci-Fi was also pretty good. Onion Rings were great and the burger was solid. The dessert was overcooked, but 2 out of 3 isn't too bad :p. Service was great here too, and the atmosphere was definitely something out of the ordinary (and very nice on a hot September day!)

I am doing the early snack at around 8:00am and taking it on the bus to eat it on the way to the park.

You have some amazing restaurants. Tutto Italia Ristorante is my husband and my favorite at Epcot.
The only restaurant on your list I am not a fan of is Yak and Yeti. They are not Disney owned. They are owned by Landry who owns Rainforest Cafe. It had more of a chain restaurant feel then a Disney feel. If that makes sense. Our last trip to Disney Yak and Yeti was the only restaurant we wished we had skipped. AK closes early but Animal Kingdom Lodge has some great restaurants, Boma and Jiko are both amazing.
I hope you have an amazing trip!

The only restaurant I would skip is Planet Hollywood. It is a chain restaurant & the food reflects that. It is nothing special at all. Also, we found the restaurant to be extremely loud...the music they have playing is blasting through the restaurant. Were you planning on being in Downtown Disney anyway or were you going out of your way to go to Planet Hollywood? So NOT worth it if you weren't planning on checking out Downtown Disney anyway. Though I have never eaten at Wolfgang Puck Cafe (sit-down restaurant) in Downtown Disney I would think it is much better than the food at Planet Hollywood. I have eaten at Wolfgang Puck Express, his ctr. svc. restaurant & the food there was very good.

No I wasn't planning on seeing downtown disney, just in the hotel that day and going to downtown disney to eat. Do you think T-Rex would be better?

I agree -- Planet Hollywood is nothing special. Atmosphere is kind of cool but it's so crowded in there it's like your on top of eachother and my chair kind of stuck out and I kept getting banged into by waiters constantly, who could've cared less if I was there or not.

The food is nothing special either.

I've heard really great things about Raglan Rd. and Paradiso and Dublins which are right there.
If you're set on that type of food, I'd go TRex before that.
