Short Trip for a 3rd birthday(boy). ADR suggestions?

We have a short trip (3 days) coming in August to celebrate my son's 3rd birthday.

My 180 days is coming up this week and looking for suggestions as I've never really planned a Disney Trip this far in advance to actually book reservations this far ahead.

I am looking at only wanting to do 1 reservation a day, at least one character meal and hopefully at the parks we will be at (MK and DHS).

Suggestions? Anything (because I am able to reserve right at the 180 day mark) that goes fast that I should stay up until midnight to book right away?

my son really enjoyed Chef mickeys at 3 and this past September for his 5th birthday that he wants to go back but his mom did not enjoy the food as much

Thanks .. I like the idea of going to Crystal Palace for breakfast before the park opens, but the day I was targeting to go to MK was an EMH day where the park opens at 8:00 AM .. so I don't think that will be quite a benefit.
I am not sold about doing big breakfastes anyway,

PP suggested Chef Mickey's. Another great choice. Be Our Guest is going to start accepting lunch reservations tomorrow, 2/25, and it will still be a QS meal. Of course, you could try to grab a dinner reservation there instead.
