Does the ship maintain Cape Canaveral time the entire trip, or does the ship's clock change from port to port?

The ship changes time to stay in sync with the time in the ports. Your naviagtor will tell you when to change your clocks.

Right now Eastern Daylight time is the same as Atlantic Standard time so no time changes on the Eastern Cruise.

Not sure about the Western.

The Western definitely does change, you go from Eastern to Central time zone at one point, I believe for Grand Cayman.
