I need someone familiar with these platters to explain in detail what the sides are: hummus, tabbouleh and Tangierine CousCous salad. I was trying to explain what they were, but did a very bad job. TIA
 
I haven't been to Tangeriene yet, but hope to eat there on our trip in April - and I plan on having a shwarma platter! I love hummus and tabbouleh, I think if them as great summer foods.

hummus is a spread/dip made from pureed chickpeas, garlic, oil and lemon juice. very good - we use it as a dip with raw veggies and tortilla or pita chips, and spread on bagels

tabbouleh - starchy side dish made of cracked/bulgar wheat, with veggies (tomato, cucumber, onion, whatever) and herbs (mint, parsley, basil) and olive oil.

couscous salad - couscous is a tiny pasta made from semolina wheat, that is cooked by steaming it, couscous is the national dish of Morocco. Often it is steamed over a stew that is then served on top of the couscous.
