Since you're arriving before your room will be ready, I would go to a park if only to have lunch and do some walk on rides. Maybe some things you rarely do, especially if you don't think they'll still be there on your next trip. You're going to have about 4 hours until your rooms are ready.
Our family would then want to go back to the resort to quickly unpack and go for a swim and head back to the park for the evening. Sunday is not my favourite day for MK because it was always crowded on trips in previous years...but times have changed.
