This will be our first Disney Cruise ever and I am starting to freak out. What is the likelihood that we will actually get to go and it not be cancelled??

There's no way to know - we just have to play the waiting game. I'd say you have a pretty good chance of still going, or maybe it switching to 2 days at CC if Nassau gets damage.
Now, me, I'm on the 9/23 Fantasy Eastern and both of the Virgin Islands have been basically leveled so I'm also playing the waiting game. I'm pretty sure they will switch our ports and it's really frustrating not knowing. I feel your pain!

Barring another new storm that suddenly pops up, it is extremely likely you'll sail. You may not go to the intended ports, but the ship will almost certainly sail 9 days from now.
I was on the Magic in September, 2004. That was the year that 5 storms hit Florida. Port Canaveral was closed for a number of weeks due to silting in the channel. DCL switched to Port Miami and bussed guests from Orlando. The cruise two weeks before ours was exended by 4 days because there weren't any ports available for any cruise ships in Florida. The next cruise became a 3 day and was able to end in PC. When we checked in for our 'western' cruise we were told that we were being rerouted to San Juan, PR and St. Thomas, USVI due to a storm heaing west. Low and behold when we reboarded after our day in San Juan we were told that we were being rerouted to Nassau because there was a storm heading for the Virgin Islands. We were the frist cruise back into CC after it suffered severe hurricane damage. Lots of destroyed vegetation but we had a great time.
Right now the destruction on the Leeward Islands is unimaginable. With no place to shelter and debris everwhere those people are facing category 4 Hurricane Jose!
The economy of these islands relies heavily on tourism. There is no way that they will be welcoming visitors from cruise ships or by air any time soon. Let's pray for them. DCL as well as the other cruise lines will be working hard to find other ports. Itineraries will be changed. As for me I could have spent the entire week at sea. There was so much to do onboard that I am sure that I would have been well occupied.
As for the ports in Florida they may not reopen to ships for some time.
We just returned from the Aug 28 - Sept 1 Dream. We knew the chances we took by booking during hurricane season. We bought travel insurance. That's all you can do. I hope, once these two storms pass, that no one else is effected...but ...nature wins...every time!
