Lets say you have 160 points at AKL. Are you able to sell part of the contract, say 50 points, leaving yourself with 110? or do you have to sell the entire contract?

You have to sell the entire contract.

The only way you can do that is if you purchased teh contract in a series of small contracts. This might be the case with an add-on, but if it was a master contract, it can't be split up.
