Can anyone tell me how I find out what plane flies on what route - eg. British Airways, Heathrow to Miami!!

Often the easiest way is to go on their site and put some dates etc in for flights only, many sites give the aircraft names at that point before you choose the flights and times you want.

BA give the flight details then you choose the dates and proceed. On the next page you click the flight number and it gives the following info:

Flight: BA0207 Non smoking
Operated by: British Airways
Departing from: Heathrow (London) Terminal 5
Wed 7 May 2008, 09:35
Arriving at: Miami
Wed 7 May 2008, 13:40
Number of stops: 0
Flying duration: 9hrs 5mins
Aircraft type: Boeing 747 jet
Selling class: Y

Then go to seatguru.com to check the pitch and IFE details for the aircraft

If it is to see what seats are left it is more likely to be www.seatcounter.com

Does this show only up to the last remaining 10 seats available? I've checked a couple of dates and all the ones I've looked at show a maximum of 9 in any class, so I'm wondering if it just ignores any available seats over 9 :confused3

That's the way I understand it, I think it only counts down once the seats drop below 9.
