if you start your stay in one season, say regular and then your stay extends into the next season, say holiday, do you pay the same regular rate throughout or does the room rate increase when the next season starts?

You can book the 2 parts of the week separately and ask to keep the room. I've heard this works. Then you only pay what the season actually is for the day. This is probably not an option if you have a package, but will work for room only. Worst case is that you have to switch rooms at some point.

is going down for Christmas next year. We would try to arrive when it was still regular season, like the 19th or some such number and then leave the 26th. This depends a lot on school, but it may be the best option. I would sure rather pay regular season rates over holiday rates.

Does anyone have a general feel for when the parks really pick up and are the busiest around Christmas?

Any holiday is going to be busier that a non-holiday or regular day. My cousin used to go down every year for Christmas and she told me that the week between Christmas and New Year's Day is (or at least used to be) the busiest time. Maybe Thanksgiving won't be quite as busy as Christmas week.
