Is there a way to figure out how much the restaurants that have seasonal pricing will actually cost for the time we plan to be there? Starting to think about where we want to make reservations at for our next trip and so many of the places list the price as $35 - $59.99, hat is a pretty wide range. I can budget the higher amount for everything but it would be nice to know what it actually costs if there is a way.

No.

That range is actually typically breakfast vs. dinner.

Current pricing is at https://www.disboards.com/threads/buffet-character-shows-aycte-pricing.3108466/ and that is updated regularly. The pricing there is a good starting estimate.
 
The reality is that Disney can (and do) change prices and menus any time they want, so it really isn't predictable. Once they go up, they rarely come down, so "seasonal" pricing is a bit of a lie.
 

I always budget for the higher end (especially if going at a holiday time or peak season) and that was I'm good!
