I teach ESE kids with EBD- Emotionally/ behavior disturbed and my kids are doing a fundraiser to to earn money to stock the class store with incentives for good behavior.

We decided to do a lunch for the faculty with a Valentines theme. This helps promote social skills, team work and gives them "job practice" by cooking, serving and busing tables.

I need good ideas for an appetizer, entree with sides and dessert that won't break the bank. We plan for faculty to pay $3 a person.

I know I would like to do a spring salad for an app and a strawberry cheesecake for dessert, but I am really struggleing with the entree to keep it cheap. No spaghetti, as the EMH clas did that for Halloween.

Thoughts???
 
Several groups around here grill chicken quarters - it goes over very well and I saw at my local grocery it is on sell for 39cents a lb. But you would need volunteers to help man the grill.
 
Pizza is my kids fave thing to make and easy to serve. Homemade soup would be harder for kids to serve, but is frugal. What about heart cut-outs of sandwiches on good bread?
 

I know you said no spaghetti but we often do a Chicken and Broccoli Fettuccine Alfredo and while it's still *pasta* it's a little nicer and super easy to make ahead of time.

When needed in large batches we pre cook 1lb box of ziti style noodles, place in a 1/2 chafing dish, pour in a jar of alfredo sauce, 1 bag (or even a 1/2 bag) or frozen broc, and then some pre cooked chopped up chicken. Sprinkle with mozzarella and refrigerate until needed (can be make up to 1 day in advance). When ready to cook toss in an oven for 30-45 mins @ 375 and you are ready to go (only needs 20 mins if you didn't refrigerate). It's easy to make larger batches by keeping the ratios the same, 1 of everything per 1/2 chafing pan. You can also take all of the same ingredients and place in a crock pot in the morning and they will be warm and ready by lunch. Serve with rolls and salad. :thumbsup2

how about homemade personal size pizza in the shape of a heart. Pizza is cheap and easy to make and the kids will get a kick out of getting their hands dirty making it.

Quiche - 2-3 different kinds
Strawberry Shortcake

It's simple, easy, and won't cost a lot!
 
What about a taco bar? You can get the tortialla bowls to make it more of a taco salad.
 
The taco bar is a great idea, we have done that several times. We have a Taco Casa and they donated some of the lettuce, cheese, etc. We have also done soup and salad (several different soups in crock pots). Our teachers favorite is a baked potato bar. Our local grocery store bakes the potatoes for us, charges about .80 per potato and we ask parents to provide all the different fixin's. Most Wal-Mart's will donate a $50 gift card to non profit organization. You will have better luck if you apply at the beginning of the month. Good Luck!

Taco bar was one of the suggestions the kids made, but it reminds me too much of the school lunch on Fridays which is Nachos and rice. Blechhhh
