Probably because their not as good as a reservation.

You gotta love lawyers.

Because a "reservation" implies that space has been specifically set aside for you at a set time. That if you want to eat at eight o'clock, the restaurant essentially promises you that a table will be ready for you around that time. Depending on the restaurant and the average length of a meal, that means they may keep a table empty for a while just so it's available when you show up. Reservations are considered essential by restaruants to provide proper service - it keeps the flow of business steady and even (e.g., the kitchen is constantly just busy enough to be efficent, but it never get hits with so many orders that it slows service).

Disney, however, is more concerned with turnover. Instead of reservations and the implied "your table is waiting for you", a 'prioroity seating' means that you're supposed to get the next table available. That could be ten seconds, it could be an hour. It depends when people leave. The advantage is this system keeps the restaruant completely full at all times (if there's sufficent walk-up traffic). The downside is that waits are longer both for people with "priority" and for the poor, sad walkups because the traffic flow isn't managed as effiecently as possible.

And of course, it also protects Disney from the guests screaming " I had reservations for 7 o'clock and we didn't get a seat until 7:30 and now I'm going to miss my FastPass!!!". A "priority seating time" doesn't imply the promise that a reservation does.

And that makes a office full of lawyers happy.
 

I have no idea on the statistics, but I hate to think how many guests book ADRs and never show or cancel. We even read on the Dis how some will make multiple ADRs for the same group at the same time, differnet restaurants/parks.
Not to mention WDW is different than most restaurants because so many guests rely on Disney transportation.
I think what Disney has works well.
I cannot count how mant PS/ADRs I have made (and done) over the years. I think the only place we waited past our time more than a few minutes was Rose & Crown, which was a complete bust of a meal anyway.
 
I really like Pleasure Island. I have fond memories of my first time there 13 years ago on my honeymoon. I think it strikes a great balance between fantasy and good wholesome fun during the day and a little adult fun at night. However, last year, I did notice a couple of changes that it needed to be revamped.

Hopefully they don't let it go!!
