Saturdays in mid-may and 1st of Dec?

We are planning trips to Orlando mid-May and Last week of Dec - How do Saturdays go with the Universal parks--complete nightmare? We haven't been before but would like to try these parks this year, but don't want to be in huge crowds either.

the last week of December is typically packed all of the Orlando parks. mid-May isn't too bad because school doesn't let out until the 22nd or so. but Saturdays and Sundays are busier because the locals visit as well.
