The way our schedule looks we will be heading to Lori Wilson park on the weekend. Crowd wise will it make a difference if we go on Sat or Sun? (Sun is Fathers Day). We want a relaxing day away from the craziness of Disney. Any opinions?

Sunday would have less locals .. at least that is how I look at it

at the beach?

Sundays are probably the busiest day at Lori Wilson. Get there early to find a parking place or wait till later in afternoon when someone leaves after their morning and early afternoon in the sun.
Weekends a lot of people land locked in Orlando head to the beach, but Sundays are generally the most crowded.......still lots of beach away from crowds once you find a place to park.

Opposite here.. seems more go on Saturday than Sunday.. I guess it all depends.

we are going to wdw next week. We are planning a day trip to sarasota lido beach on wednesday. (unless weather forces a change).

We went last march. it is an hour and a half drive each way, but worth it. we packed a cooler and made it a day.
