sandwiches?

I have some leftover ciabatta dinner rolls and I thought they would make good mini sandwiches - especially the kind of sandwiches where it is intended for the bread to soak up some of the sandwich dressing. Then I realized that as good as that sounded, I don't really know how to make that kind of sandwich :rotfl:

So, any ideas? What kind of sandwich would you make?
 
Chicken parmesan sandwich with melted mozzarella and marinara or tomato sauce. Or a meatball sandwich.

I often use ciabatta rolls with soups and stews. They are often a perfect complement to those dishes and you can dunk them, too, and soak up some of the broth.

I do little Italian subs on ciabatta rolls. I split them in half and warm them up in the oven--slightly so they are just a little crisp. I put ham, genoa salami, and provelone cheese on them. Then I shred some lettuce and red onion and mix it with Italian dressing to top the sandwich with.

For a hot melt sandwich, I eliminate the salad mixture, just put a little of the Italian dressing on the top of the roll, close up the sandwich, wrap it up in foil and bake in the oven for 15-20 mins. until heated and melty.

Two options

The pizza shop next to where I work makes a "foccacia" sandwich. It's sort of like an Italian sub, only they bake it in a big round the size of a large pizza and cut it into 6 pieces. It has ham, salami, sliced fresh mozzarella, lettuce, tomatoes, oil and seasonings. The bread is sprinkled with grated Paremsan and seasoning. You could adapt it to the Ciabatta, just pop the sandwich in the oven to melt the cheese.

Something I was craving for weeks and finally made the other night, Italian chicken cheesesteak. I used cubed chicken but you could you use a breast or strips depending on the size of your roll. Cook, or warm pre-cooked, chicken. Coat with creamy Italian dressing. Melt Boar's Head Sharp American cheese over the chicken and serve with Romaine lettuce.
 
I like grilled chicken with roasted red peppers, mozz and balsamic vinegar:thumbsup2
 
I like to make my version of a greek salad and then either dunk the bread into the bowl and scoop up the ingredients or make a sandwich out of it ...

chopped tomatos (I like to cube them)
chopped cucumbers (I like to cube them too)
crumbled feta cheese
kalamata olives (or even black olives)
olive oil (I put a little extra if I'm going to be dunking the bread, makes more juice this way)
seasonings (salt, pepper, oregano, or whatever you like) to taste

Thanks everyone! At the store today, I picked up some genoa salami and the MOST delicious ham I've ever had (I'm really not a huge fan of deli meat but this was GREAT). I already have provolone so I'm going to start off by giving this one a try.
