San Angel Inn Guacamole

Strange question but does anyone know if the Guacamole at San Angel is fresh made at the table? Or is it premade

Premade but good enough that I ate an awful lot of it. So much I wasn't able to finish my meal.

Not made at table but also not the premade and preserved that you'd buy in a container at the supermarket, if that makes sense. Definitely fresh (I'd imagine they make many, many batches a day in the kitchen), chunky, and very, very good. No hint of oxidizing/browning and no artificial taste. Also served in La Cava de Tequila.
