Do all the tables have a water/boat view? If not, do they have a nice view of something? If I dine alone, will they put me in a corner or part way into a servers' station?

1. No, they do not. In fact, most of them don't.
2. The pavilion itself is pretty. Unless you are sitting in the middle of the room you will be looking at something. There is an "alcove" down by the restrooms that is also not considered prime real estate.
3. If they do, it will not be because you are alone. It will be because that is where the next open 2 top on their schedule was. If you want to wait for a waterside table, say when you check in that you are willing to wait for one.

Would they really give me a water view table if I ask and wait? Somehow I feel less entitled if I am by myself.

They might, or they might not. Doesn't hurt to ask but you should be prepared for them to tell you that you have to take the next table that is open, no matter where it is.

I went there alone once. I wasn't concerned about the view or anything but they put me at a table and served fish tacos. I'm eating my fish tacos and a party of 10 comes in who are being seated at two tables opposite me. The woman in charge of this party began demanding that they move me so that her party could use my table (she liked its location better than one of the tables they had been assigned), because "she's by herself and you can move her." A manager ended up being called who, when being asked "why can't you just move her? We are worth more than she is" (yes she really said that) politely declined to remove me from the table and said Ms. Demanding and her family could take the tables they were assigned or not.

So I don't know why you need to feel any less entitled to anything because you are alone - the restaurant management apparently does not feel that way, and as for what the rude gal thought, well, she was just rude. If she'd just been nice about it then MAYBE I would have offered to switch tables with her party.
