I always make my own personal daily touring plans for the parks at WDW. Those made by someone else just dont fit my preferences. For example I have some attractions at each park that I dont care to experience at all, and some that I like to do at least twice; so simply using someone elses plan, which always includes things Im not interested in, basically makes the plan unworkable. Also, I dont like to backtrack all over the park as some plans require. If I want to walk a bunch, Ill get myself a treadmill. (In other words, Im on VACATION.) In addition, I like to plan my meal locations to fit my daily plan, and a preplanned itinerary wont work well in that regard either.
So heres basically what I do:
1. Determine the parks opening and closing time. (Im not into parade watching at Disney; but I do make note of the parade times so that my itinerary wont trap me in one area of the park when its time to move to another part of the park.)
2. Make a list of all the attractions Id like to experience at the park (listing them in the logical order one would come upon them while walking in the park), and noting the minutes required to watch the show, or ride the ride, and noting the attractions where a fastpass is available. Then, looking at a park map, allow for time to wait in line, (based upon the expected crowd level on the day I plan to be there), as well as time to walk from one attraction to the next.
NOTE: During this part of my itinerary making I also make note of the starting times for any shows Id like to see during the day. I plan the shows making any adjustments to my walking plan necessary; usually not a problem. (This part of my planning only applies to Animal Kingdom and the Studios.)
3. Looking at the park map, I add two meal stops. (I have breakfast at my resorts food court.) Lunch is normally at a counter service spot, and I make a reservation for dinner. Both of these meals are planned to be not far from the last attraction visited.
4. I put it all together on one sheet of paper, adding travel time to and from my resort to the days park.
My daily itinerary almost always results in a really enjoyable day at the park, and I often find myself with extra time during the day to sit on a bench and enjoy people watching, enjoy street performers, listen to the music, and have a cool refreshment from time to time.
