I am looking for some ideas/recipes for what to put in a salad for our Easter dinner. I have had a salad with mandarin oranges and crispy fried noodles. What else should go in? What type of dressing? Thanks for the suggestions.

You could put in peanuts and chicken.
For a dressing idea-you could do an oriental dressing. Or the same type of dressing you would use for a Chinese Chicken Salad.

Chinese Chicken Salad Dressing-
1/4 C. Sugar
1/4 to 1/3 C. Vinegar
1/4 to 1/2 C. Salad Oil
2 T. Sesame Oil
2 tsp. Salt
1 tsp. Pepper
Sesame Seeds

This is an awesome salad......

Japanese Salad

1/2 cup sliced almonds,toasted
2 tbsp sesame seeds,toasted
Put in 350 oven, stir often, remove when golden
1 Pkg instant noodles (ramen etc.)
1/2 pkg chow mein noodles
1/4 cup salted sunflower seeds

1/2 med head cabbage, chopped
1 pkg bean sprouts or handful fresh
2 cups sliced mushrooms
2 green onions, chopped

Dressing:
1 pkg seasoning from instant noodles
1/4 cup oil
3 tbsp soy sauce
3 tbsp vinegar
1 tbsp sugar
1 tsp salt
1/2 tsp pepper

Combine the first 5 ingredients.
Combine the cabbage, bean sprouts, mushrooms and green onions seperately. Combine the dressing.
JUST BEFORE SERVING toss everything together!
If preparing ahead, keep the dry ingredients seperate from thr vegetables and dressing as they become soggy.
