If 3 people are sharing a room, all different last names and different home addresses, will their charges be charged to their individual credit cards (assuming of course they each put one down) and can they each book a placeholder as individuals that don't have to be used on the same future sailing? (I hope I worded that properly)

Yes and yes -- assuming all 3 are adults. If one is a minor I think they can still set-up a credit card but an adult must be noted as responsible. Also a minor cannot make a placeholder.

Yes, at check-in you can enter a payment method (such as a credit card) and the guest or guests whose charges will go to that payment method. The payment method can be different for each adult guest in the room.

Each guest with a separate home address should be able to book a placeholder for themselves through the app (as long as they have downloaded the app and logged into their individual account).
