Rides with limited arm mobility/use

I am traveling alone with my 2 daughters ages 8 and 9. My 9 yr. old has down syndrome and loves thrill rides but I am terrified she'll try and climb out mid-ride. My 8 yr. old has arthrogryposis and consequently has limited use of her arms. She would be unable to hold on to a lap bar but she does have great trunk and head/neck control. She also is a thrill junkie.
I've not ever taken them both alone without another adult to share rides with. Does anyone have suggestions for riding the bigger rides that only seat 2? Will my daughter with limited arm use be secure enough and not slide out of the ride? Would my daughter with DS not be able to escape her seat if she tries?
 
As for the attractions they basically do not have an age limit although no child under the age of seven can ride unaccompanied no matter if they meet the height requirement. So if you have children 7 and under they will have to wait until you can ride with them or another guest who is 14 and older.
 
I think I would ride with your Down syndrome daughter for the most part. It isn’t easy to get out of rides but I suppose it could be possible at times. I think for the daughter with limited arm use - she will be ok bracing herself with her legs. I can’t recall needing to hold on to anything to stay upright in the rides except maybe thunder mountain and dinosaur. It probably isn’t required on either of them but I’m more comfortable holding on.
