Is it the ride start piece that pops up the car? I don't see where you can buy the car. When the character steps on the start piece, it just happens?

Do you have to use the start piece that matches the rest of the track?

Do all track pieces have to match in a continuous ride?

Yes, the start piece is the only piece you can walk on to enter a ride.

The start piece does not have to match the rest of the track, and the track can have mixed pieces.
 
Yes, you must purchase some type of start piece to begin your ride. There aren't really ride cars to purchase, your character just appears in one when you step onto the ride. The ride car will change, however, to match the ride track your character is on. For example, if you use a Splash Mountain Start piece and then an Expedition Everest ride track, your character will switch into the Everest car automatically when you're on that piece of track. If you continue the track with some river pieces, your character will switch into a boat. You can also use any type of ride teleporters if you want your ride to have two separate lengths in the same room or make the ride continue into another room.
