Just returned from an 8 night trip with the free dining plan. It was (almost) stress free. Here are some reviews. This is my second time typing this - I don't think it went through first time. If it did, sorry for the duplication.
Teppanyaki - Great service, great food. My 11 and 7 year olds loved it.
A+
Biergarten - This was entertaining and fun. Some food was great, some just OK.
B-
Le Cellier - Service was wonderful. Cheese soup was just as great as it sounded. I thought the rest of the food could have been better. It was nice but IMHO, not worth stressing over if you can't get an ADR.
B-
Ohanas - he food was fantastic. We loved the skewers and the bread. Fun atmosphere and games for the kids. Unfortunately, the service was way below what we expected and we're honestly not that picky. The hostess at the podium was just short of rude. Our waitress was surly, adn didn't smile until the end of the meal. We did notice that other tables had much better service, so maybe it was just that one server.
A for food, but D for service.
Whispering Canyon - Our favorite. We were blessed with the best server that night (BJ). He entertained us with jokes and antics for 2 1/2 hours - never once hurrying us, in fact encouraging us to stay longer. BJ dressed up in silly costumes, did dances, told jokes, and performed all the other "tricks" you've read about.
A+ (Although I don't remember what the food tasted like - I had so much fun)
Luau - This was fun and service was phenomenal, but the food could have been much better. What the heck it was free!
B-
Sci Fi - The kids loved this one! The food was not great (but not terrible), but the cool, dark and entertaining atmosphere made this a big hit.
B+
Hope this helps those lucky enough to still be planning

Thanks for the good review of WCC. We are going for my DW's 40th birthday in October. I hope we have tons of fun like you did.
