I have a severe peanut allergy, only need to inhale the protein to have an anaphylactic reaction. Anyway after spending 21 nights at WDW (AKL) (so we ate at a lot of restaurants in 21 nights) last year, I have to say, that it is the best place in the whole world that I have travelled when it comes to eating! It really was a breeze and every restaurant or CS that you mention it to, is right onto it, you know some places its like "OH I don't think there are any in there". Not here. At TS, the chef will come out and either go through the menu and tell you what is safe or they will take you round the buffet and say what is ok and what is not. They will also even offer to make something if there is something on the buffet, eg waffles that is near the peanut butter pizza, they will make a fresh batch for you. Again at CS I had a chef tell me from the board/menu, what was safe and what to avoid.
Places that I was really nervous about eating at and only did so once was Boma, not breakfast, breakfast was great, but dinner. They had a peanut rice on the buffet. So whilst that was pointed out to me by the chef and avoiding the dishes either side of that, I was so nervous that one of those little grains of rice may have accidently dropped from somebodies plates into another dish. So we only had dinner there the once, but breakfast many times.
The other was Chef Mickeys, they have a peanut butter pizza on the buffet. Peanut butter makes me nervous, worse than the rice, its a finger using food, use your fingers to eat it, kids have that peanut butter traces on their finger, leave it places without realising. Anyway, it was still ok, the chef did offer to cook anything fresh like the waffles if I liked, but I just steered clear of the pizza and was fine.
After my wonderful and stress free holiday at WDW, we went to
Disneyland Paris a few months later. It was a NIGHTMARE (only in the food/eating part was it a nightmare, Disneyland Paris itself was wonderful). They use peanut oil everywhere, hardly anything is safe to eat, it was really a very scary experience and every meal had me very nervous, but it really made me appreciate just how incredibly wonderful they are at WDW when it comes to allergies.
Enjoy your trip, as others have said, note it in your ADR, tell them on check in that you have the allergy in your group and they will have the chef come to your table, at CS just advise them of the allergy and they will go through what is ok and what is not. Also there is the list of safe snacks that they can email through to you or did I print that off the internet somewhere. There are quite a few peanut free snacks available, we had them at Mara (unfortunately, as i became addicted to the peanut free brownie

couldn't stop eating them).
