Restaurants with last minute availability?

I've been checking on MDE for restaurants with last minute dining availability since one of our party will have a couple of business meetings where the time could possibly run longer than anticipated. We are in Yacht Club with park hoppers so would want something in that area. It seems Ale and Compass, Biergarten, and Coral Reef always seem to have availability, and both table service places in Mexico, along with Chefs de France frequently do. I like Chefs de France and plan on making a reservation here on a night we are sure we can make it. What's up with all the others? Are they that bad? I've seen mixed reviews. What are the pros and cons of these, considering we will have two school age children with us?

have not been to Ale and Compass since it changed.
Coral Reef has been spotty in the past, some meals good, some not. so many better options in EPCOT, except for the aquarium.
Always found the food at La Hacienda much better than San Angel. While its improved, the tables inside were always too close.
I suspect there are many more ADRs available in EPCOT due to the shorter hours. With it closing at 7, I don't want to spend park time at a TS. We have our ADRs set for just before close.
