Restaurant opeing times in January

Hi everyone

We will be at DLP for 4 nights from 6th January, we are trying to decide on where to eat and I am wondering if anyone knows the opening times for the restaurants in the parks We are particularly interested in Walts, Blue lagoon and Bistro Remy.
