Restaurant Hours

I want to eat at Flo's at 8PM but DCA closes at 8PM. I do not want to spend my last hour in Carsland, eating dinner.

Do the restaurants close after the parks, like the shops do?

No, most of the dining locations will stop serving guests when the park closes, if not earlier. To be safe, I would get there about 15 to 30 minutes before the parks closes to make sure they'll be able to take your order. My family often gets a late night snack at Jolly Holiday and we have been there on evenings when they closed the doors about 15 minutes before the park closes. For right up until closing (or even a bit after), your best bet is Starbucks (on BVS or MS).

If you are in line at a restaurant, or ordering just before closing, you should be able to stay and eat, at QS places like Flo's. (Just like rides, if you're in line before park closing you can stay and ride).
TS places stop taking reservations before park closing.

I don't recall how early I've gotten to QS places before closing and still been let in...but I would take figment_jii advice and go 15 minutes early...

Yeah, if you know you want to eat at Flo's, I would check with Guest Services that day and ask them what are the operating hours.
