The days I need a 2 bedroom at AKL aren't available but when I extend my stay an extra day I can book it. Does anyone know if after I book it I can go back and cancel the extra day and be fine?

I don't know for sure but why not try?
As long as you are within the cancellation period you won't be charged.

Probably not, but I've read that it's possible if call and ask. Disney usually requires that the new number of days be available as a block to make the change. But, again, call.

In the past it was not an issue but the last couple of years WDW will not just remove a day, they have been cancelling the entire trip and then trying to re-book it. I have also read where people have been calling guest services asking them and having some success, but no guarantee they will do it, it's at their discretion.
