How cool do they keep things? One review I read said they were like an electric cooler and unlikely to keep food at a safe temp. I need to keep milk for the week and don’t want to get sick.

Also, do they have the little freezer compartment in them? I would really like to be able to freeze my water bottle the night before a park day.
 
No freezer in them any more. Provided you are talking about what's in a regular resort room, not a DVC room.

They keep milk cold enough to be safe. I prefer to leave the door slightly ajar. The seem to cool better when they have better circulation.

Is there any way to freeze an icepack? I do like to take food with us to the park, but worry about the Florida heat if I can't keep it cool in my lunch box.

Not in your room. Bell Services does have a freezer but I do not know if they will freeze an ice pack that's just for a cooler. You can ask of course. Most people just get ice from the machine at the resort and put it in zip lock bags.

you will need ziploc bags to keep ice in unless you are in the cabins at Fort Wilderness which have full size frig. security will not let loose ice thru

I would never try to bring loose ice, even if it were allowed. I’m not bringing a full on cooler, just a regular soft lunch box with snacks and maybe a sandwich for DD who can be a picky eater.

I suppose I could use a ziplock as you and @AngiTN suggest, but leaks seem inevitable. It’s why I like ice packs or just freezing a water bottle or juice box.

there is no freezer even small so frozen bottle or juice box not doable
 
I would examine your fridge before you put anything in it - just make sure it's set at a proper temperature. A few years ago, at Poly, I put some items in the fridge only to discover later that it wasn't cold enough. They sent an engineer up and, sure enough, it was set on the lowest temp (he then showed me how to adjust the temp. Not sure if the fridges are the same, but at that point, the temp adjuster was on the back of the fridge). Thank goodness I only had a few items in the fridge and replaced them once the fridge was cold enough. I now check the fridge whenever we check in to a new room.

Thank you. This is one of my concerns. DD consumes a lot of dairy, so it’s important to keep everything properly chilled. I really don’t want to deal with food poisoning on vacation.

Bring a reusable water bottle and fill it with ice? As long as it's not an insulated water bottle it should do the trick. In my pre-ice pack days, a cold can of soda actually kept my lunch box pretty cold.
 
Could you set a juice box in a bucket of ice overnight - it probably wouldn't freeze but should make it good and cold for a lunch box. I know at home I've tossed one in the freezer for less than an hour before school and it was fine.

Otherwise, I'd just go with the bagged ice idea. Or bring a reusable container with a good seal, and put the ice in that -- like PP suggests a small water bottle filled with ice. Bonus you can drink it after lunch.

Ice water for free at the parks if your worried about warm water. What snacks are you looking at ? Can you modify your plans to only take non melty items?

Zip lock backs do not leak if you close them. I use freezer version, they have a double seal. If they can keep food fresh in a freezer they won't leak
Double it up if you are so worried about it
 
Honestly, I wouldn't ask Bell Services unless it was for medical reasons. Just use a zip lock bag.
Same. But I hate to be a bother. I also think, if everyone there asked just to freeze something for their lunch then they'd never have room for it all. If they do for 1, it's hard for them to say no to another. I don't want to be that guest. Especially when it's so easy to use a bag.

I'd be SHOCKED if the new ones can do that. We've kept beverages cold but they didn't even come close to freezing.

Not really about the items melting, more about them staying safely chilled. She really doesn't eat meat (doesn't like it, not purposely vegetarian), so cheese sticks, yogurt, cheese sandwich for lunch, etc. are all go-to items that I know will give her some protein and not just carbs.
