Resort hopping only - no parks! Suggestions?

I'll be attending a conference in February and bringing my mom. We will have 3 evenings free, and one morning/afternoon. Would love to do some resort hopping and see areas that we haven't seen before.
So far I have dinner at the Polynesian one night (sit on the beach and watch MK fireworks), and Afternoon tea at GF for our last day.

What other resorts/activities/restaurants should we do?
 
Maybe the Electric Water Pageant, then drinks at The Wave?
Or dinner at California Grill or Chef Mickeys then the EWP and drinks at The Wave.
 
Or dinner at Whispering Canyon Cafe then look for the hidden Mickeys at the WL.
 
Dinner/drinks in the Epcot resort area. You can bus to Hollywood Studios and then take the friendship boats over to Boardwalk, Beach Club/Yacht Club, or Swan/Dolphin. Lots of good options for drinks, dinner, dessert, and evening entertainment too!
 

We did the monorail loop once. We did a drink at each lounge in Grand Floridian, Contemporary, and Polynesian and also went into each gift shop and looked around. We ended up having a lot of fun.

The Epcot resorts are also fun because they are all so close. The Boardwalk area is fun at night and all lit up.
