Reservations when switching bookings

Ok so hoping some of you experts can help me out. We currently have a trip booked for 9 nights starting Aug 25th 2016. So that means my 180 day mark is Feb 27th which we plan on making reservations. Now comes the tricky part. We recently won a gift certificate for a substantial sum of money for a different travel provider, however we won't receive the gift certificate for another couple months.

So the question is, what happens to our reservations if we cancel with one provider and then re-book with a different one? Do they disappear when I cancel my trip with the first provider? Is it possible to leave the current booking and do the reservations, then book the trip through the second provider and then cancel the first?
 
I thought you had to have a resort reservation to book 180 days out, so what happens if you cancel your resort reservation after making dining reservations?

No. Everyone and anyone can book at 180 days out. The resort reservation allows you to book forward from that point for the duration of your reservation. But ADR's are in no way linked to your resort reservation.
