My first post. I am so proud. OK here is the problem. In just two short weeks I will be able to make my dining reservations for our Feb. trip. I have never made those reservations without already having my room package done. If I have the room reserved, I can do the entire weeks dining plan at once. Without the room reserved, I have to go on-line every day to make my reservation. As there are no special offers yet, I was wondering - if I made a room only reservation now, do my dining reservations in two weeks and then wait for the deals to be announced, do I lose the dining reservations because the original room only deal has now disappeared for the package deal? C'mon Disney-Announce those deals for 2016.

Based on this fall, deals may be few and far between - many resorts were already booked to capacity or booked to the point no deals were offered. Room only is always refundable up to a few days before check-in, so if you know you want to stay on property I would book that room now and then IF there is a deal for your dates and resort change to that.

As for dining reservations, I thought they were tied to your MDE account and not a room reservation...

You won't lose your dining reservations if you make a new reservation because a deal comes out and cancel your old reservation. I have done that more than once, including a month or two ago for our trip later this year. I've never had any issues with losing my dining. As long as you are in the 6 month period by the time you cancel the dining ADRs are treated separately. Now I don't know what would happen if you cancelled the reservation while you were still in the 10+ day period and had ADRs that you would not be allowed to book yet- the system could treat those differently- but I have cancelled the reservation I had when I made my dining reservations more than once and have never had an issue. In fact, once I booked 2 different trips and had ADRs for both as I was unsure whether we were going to go in December or October, and after I cancelled the December reservation, I had to go in and manually remove all the ADRs. They do not disappear on their own.

As PP said, ADR are not connected to your room or package reservations. They are a stand alone system. This lets locals and those not staying on property to make ADR at any restaurant.

Here is a link from Mousesavers that shows historical discounts by date and the type. This is a good reference as when to expect when new discounts will be announced, but it is no guarantee.

Make dining adrs anyway. You can bag them later. February is low crowd so getting adrs may be easier to get later too.

Depends on when in February. Much of the northeast (and some other areas) have Presidents' Week off, and Disney is a hot vacation spot for that week. I've done it before and while not quite Thanksgiving crowded it was still VERY crowded.
