Reservations always needed?

Forgive me this is my first post, but is it necessary to book ADR's for most all table service restaurants? I know I need them for character meals, but other table service? This is our first family trip and I am pretty overwhelmed with all the planning reservations force us into. I don't want to do all quick service because my kids will end up eating all chicken nuggets our entire stay. I think we will go with the regular dining plan. Advice?
 
I've read that people have luck calling the night before the day you'd wanted the reservation and getting in. Some people cancel (some are like me, who book multiple reservations for the same time because they are indecisive)! I'm going to try it when I'm there.
 
It depends on your time of year, but I will always have ADRs now. I used to wing it a little more, but I want to make sure I get to eat at the restaurants I want. But, I go in January. So, if I change my mind, there's a good chance there will be an opening somewhere else.
