We have friends of our that have a reservation for the week of Thanksgiving. They have decided to not use their reservation. Is there anyway or what is the best way to change that reservation into our name? We are open to any options! I don't want them to cancel their reservation and it be lost to us before we can book it.

No, the reservation would have to be modified to have your names on it. This would have to be done by the guest who it is booked by.

Is there anyway or what is the best way to change that reservation into our name?

PLEASE BE CAREFUL ABOUT TAKING THE FINAL WORD OF A PHONE-RESSIE-CM AT WDW:
1) For the OP question: At resorts for rooms or cabins at The Fort, yes . . . at The Fort for a campsite, no.
. . . at a resort, you could be added as another person in-the-room, check-in without them, and get a room key (as if you arrived sooner than the main person on the ressie)
. . . at The Fort, you don't get a campsite number if you are not the main person on the ressie (you can check-in, but not get the campsite number)
2) We used to have people make blind (aka: ghost) ressies, then actually sell them off to others.
. . . for prime seasons and holidays, these Ghost Ressies were worth hundreds of dollars of profit to the person making the ressie. (AND, you thought Jack Sparrow was a pirate ???)
3) This procedure stopped the ghost ressies and profiteering.

Note:
The name add/change conversation quoted by snowmedic might work, but it is not supposed to.
It is only viable for resort rooms, and is done frequently; the phone-ressie person might have been confused.
It would be rough if you tried to check-in, we caught you, and we turned you away from your Fort vacation.
And, YES, I have had this tied on me at the Concierge desk, when a Front Desk CM sent the guest to me.
Remember, phone ressie people have been often wrong, and sometimes VERY wrong, in the past (I can give you many different examples).
 
TheRustyScupper I would hate to get there for our trip and to be turned away. Is there a way to make this happen? Could both the original camper and us be on the phone at the same time to make the switch? Or is our only option for them to get rid of the reservation and us to hope for the best making our reservation right after? When my friend said they weren't going and asked if we wanted their reservation I really thought this would be a simple thing. Just want to do this the correct way and have a great Thanksgiving at the Fort!!

Rusty, if they are added as campers to their friends reservation, and their friends do online check in and let them know the site number, won't that solve the problem? I think I'm just not understanding how, with the option for online check-in and never having to step in to the Fort to actually check in, the process you outlined stops ghost reservations.
