So I checked for Olga cantina for a party of 3 in September and can’t find one. So I switched it to 4 and found couple. Then to 2 and found nothing

What’s the deal with the logic that a party of 4 can get one but 2/3 can’t?

Most tables hold four.
Odd numbers seem to confuse the ADR system.
Four diners is more profitable than two (or one).

Book for four. You won't be penalized for showing up with fewer.
