reservation question

We have made reservations several times for wdw but this is our first attempt at Univ. Studios. I have a couple of questions I need help with.

1. When reviewing and trying to book on-line I see they charge your credit card for the full amount right away. Is there anywhere you can make reservations, pay a small deposit and then be given a date you have to have the whole amount paid by like wdw offers?

2. How far in advance can you make reservations?

I call and book my reservation direct not on-line. They will charge you 1 nights stay per room booked, and it is refundable up to 5 days before arrival if you cancel.
