What happens if I need to add a person to my package after the 45 days prior? Can I call and do that or would/should/could I add them at check-in? I realize I'd have to pay for their park tickets immediately. TIA! :)

It depends. If you add someone after the 45-day mark, you could be charged a change fee ($50) or they may waive it because you're increasing the cost of your package. You'd need to pay for them at that point, but you could also add them to the DDP (if you have that). They would then be eligible to use DME to get from MCO to WDW.

If you wait until check-in to add them, they cannot get the DDP (must be added at least 3-days before arrival or 2-days if you're staying on DVC points) and they cannot use DME (they can book a shuttle service, but they'll have to pay for it).
 
I didn't even realize there was a three day rule for the dining. Good thing I asked! Thanks guys!
