My mom and I both have trouble walking long distances or standing for long periods, and I'm considering renting ECVs for us both. We're staying offsite though, so I'm wondering how to transport them to the parks each day. Do they fold or compact at all? Would we have to rent a van to transport them, or would we be able to bring them in our rental cars?

it is easier with ECVs at one of the WDW resorts, using WDW transportation. But, it's not impossible to say off site with one.

Here's a thread you should read if you have not read it yet.

If it's just the 2 of you, you should be able to fit 2 ECVs in a car with you, although they may not both fit into the trunk. Tell the place you are renting the ECVs from that you will be transporting them by car, so they can give you ones that 'break apart' for transport.
If you go to the disABILITIES FAQs thread, in post #2, there are links to the websites of some places that ECVs. Some of those websites actually have little videos that show how to fold/take apart an ECV.
A van would give you more space to work with and you might not have to actually take the ECV apart (some allow you to fold down the seat and tiller). Whatever you have to do, keep in mind that you need to be able to lift all the parts, at least as many times as you plan to go in and out of the car. A van would be easier because there usually is not as big of a 'lip' to lift over to get it in the back of a van and you would have to get into a trunk.

I'm sure some of the people who regularly transport ECVs will chime in with their advice.

I have never transported 2 ECV's. I do transport 1 every day. As Sue advised it is easier to transport my ECV in my van than it is in my car trunk.

It's not just the two of us. My mom's boyfriend, my teenage brother and my husband and kids will be with us. We'll have two cars, so two trunks, and my DH and brother and mom's BF can lift the ECVs in and out of the trunks. My mom and I can walk short distances, so we'll be able to leave the ECVs in the trunks of the cars if they can close and walk to our accommodations.

Another consideration is how would the dealer get them to you. If you are at a time share or condo complex with an on-site office they could be delivered to the office. However, if you will be at a villa/house that does not have a rental office you might want to consider Randy's, since they require that you be present when they drop the ECV off and when they pick it back up.

Randy's will also deliver/pick up them directly to your room, even in the places that have an office. The other places deliver to a central location and it's up to you to get it to your room.
