Rental Car at parks?

We are thinking about extending our stay by a day (will be staying off property for this extra night, staying at POR for the main part of the trip)

What are my options for getting a rental car? Any place close to the parks for obtaining a rental car that can be dropped off at the airport (not taken back to original rental location?)

Or would it be better to rent for the whole time we are there so we don't have to worry about it?

You can rent cars from the Car Care Center or the Dolphin (near Epcot). I've rented from the Dolphin recently and it was really easy. For the Dolphin, you just need to get to Epcot (if you have park hoppers or are planning to enter Epcot) or DHS and then you can get to the Dolphin either via boat or by walking.

I've not done a one-way rental, so I don't know how cost effective those are compared to round trip rentals.

I've also read that there are car rental counters at many of the Downtown Disney area hotels, so you might look into those.

As a side note, we rented a car on our last trip (December) and found that it was really helpful to get around. It meant less reliance on the buses and this was especially helpful when getting to and from AK and DTD. We also did some hotel touring, which is pretty difficult (and very time consuming) without a car.

Avis has a location in the Hilton directly across from DTD. They have a courtesy shuttle that will pick you up at your resort.

Really? But I want to be sure, do you have a map for how to get there?

Get there from where? If you are at DTD, walk through the Team Disney store and out the back entrance to the street. You will see the Hilton directly across the street.
