We arrive today and have Epcot park pass. Please, is this correct?

Do not do 7:00 virtual since may get a time before we actually arrive. Try for 1:00, if we are there on time.

how quickly do they go lately-Saturday and last day of food and wine… I’m worried about this one. I don’t want to start paying for rides when I absolutely don’t have to.

Epcot (and all of the parks) are "sold out" today (and the rest of the coming week.)
Don't take "anything" for granted.
Take any advantage you can for things that are important to you.
 
Personally I would try to get a boarding group at 7AM and if it's called before you arrive you can at least try when you arrive to see if they will honour it. Many are saying they do allow guests to ride after their BG window but a few have been told no. Ultimately it would be up to the CMs at the ride but, these BGs are filling very quickly so if it were me I'd be trying as early as possible to obtain one.

I got a VQ at 7am from the airport before we boarded our flight. They gave me a time of 1:30pm, which was perfect since it gave us time to check in, eat lunch and then go to the ride. This was on a Sunday during Food and Wine and the park was very crowded.

The CMs have been letting people go into the line even if their time have expired.
 

Also, the ride's not that great, and will certainly be around the next time you visit. If you happen to miss it this time around, no great loss. There's always next time, when hopefully the hype has died down and more and more people discover that this one is pretty much a one-and-done. But good luck in however you decide to attack it!
 
At Epcot today, got Remy at 7am, it was out by 2-3 minutes later. The ride was cute but made me a little sick with the motion, wasn’t expecting that.

Do you have more info on those being told no? I haven't heard of that.
 
We are also doing Remy on our arrival day. We don’t land in Fla until 12:30 so I’m not even going to chance it. I’m buying passes for the evening. Yes, it’s a silly little ride, but my wife really wants to ride it, so I’m just going to bite the bullet.
 
If you have a park reservation for that day, i would try for 7 am. if you miss your BG time, the worst they can do is say no. From my experience, what I've seen and read, that is rare. If you arrive early, you will be turned away. If you arrive late, generally, you are let in.
