Remy and Palo times and dates...

Sorry I am so clueless about everything!

I am on a 7 day western caribbean Merrytime cruise in December. What are the best nights to have the adult dinners? Do I need to book later on port days? Is Remy the one famous for the sunsets? Is even a 6 pm booking too late in December?

I don't want to miss the Princess night (if that still happens), but can't figure out how to find the schedule.

Regardless of what night you select, you're going to miss the menu being served that night in the dining rooms. It's your call (luck of the draw, as it were) which one it will be.

Many people seem to not care for the Pirate night menu and book that night. But, IMO, that would make Palo/Remy more busy.

Port days - depends if you're on an excursion, what time you get back to the ship, but just book the time for when it's comfortable for you.

Sunsets - depends on what side of the ship is facing west at sunset. Remy is on the port side of the ship, Palo is on the starboard. You'd have to check sunset schedules to see what time sunset is in the part of the world during the time you'll be there.

Not sure what you mean by "Princess night". If you mean the Prince & Princess menu in the dining room, that varies when it's served. You could check past Navigators for the same itinerary to get an idea of what night that menu was served.
