Red Velvet Cake

Have you ever tried this? It seems like it's a very trendy cake/cupcake right now but I always find them to be very dry, probably because the recipe uses cocoa powder.
 
My mother has always made a red velvet cake at Christmas. Never, ever dry. If I can get her recipe, I'll post it.
 
If it's made right, it's not dry.

I love red velvet cake and remember having it for the first time quite a few years ago.
 
I love it! It's DH's favorite! ITA, if it's made correctly, it's not dry at all. Sorry I don't have a recipe. The only time I've made it was from a box mix.

Oh, thanks. I don't know why mine always comes out dry; I don't normally have a problem with baking. I'd like to think it's the recipe.;)
 
I made one for Thanksgiving! I then tried to decorate it with Fall leaves. That was a disaster. :goodvibes I was inspired to stop in the Wilton aisle at Michael's and buy some fondant? and cookie cutters to put holly berries and leaves on one for Christmas. I have a fabulous version of what it should look like.
I used a box mix and prepared vanilla icing. My DD had some from Juniors and they used a cream cheese frosting which was delcious too.

I would be interested in a recipe also.
 
Real RV cake is buttermilk pound cake dyed red, with cream-cheese icing. Heart attack on a plate, but it shouldn't be dry. There is normally very little cocoa powder in it, and what is there is not for flavoring, but for color -- it intensifies the red.

Someone I knew in HS took a job cooking on an offshore drilling rig. RV cake was a favorite that was on the dinner menu every day -- she made 10 of them every single morning.
 
We had it for my parents' 50th anniversary party back in September. It was from a bakery in Louisville, KY and it was delicious!!:thumbsup2
 
Red Velvet cake is one of those traditional nostalgia foods for me. My Grandma always made one at Christmas, which is what I almost always think of when I eat red velvet cake. It was never dry... always very moist and served with a thick cream cheese icing.
 
I have a recipe for it somewhere that includes mayo.. Any cake with mayo as one of the ingredients will never be dry - very, very moist.. I'm trying to remember what the mayo takes the place of.. Could be the shortening in a cake recipe, but I'm not sure..

If I come across the recipe I'll post it.. :)
 
On food network last night, they had Bobby Flay on where he was challenging a Red Velvet Cake EXPERT! Google Food Network and Bobby Flay and see if it comes up. This guy was in NY and used vinegar in his cake.;) "The Cake Man" I think his name was.;)

It's not pound cake, but it is dense like pound cake. That's actually what I don't like about it. The flavor is good, but it's too heavy.
 
When made by someone who can actually bake, this is my all time favorite cake.... this, or maybe a 7up pound cake.

Someone brought a RV cake into my workplace a few weeks ago... it was downright NASTY. I mean spit it out of your mouth NASTY! Hopefully that experience didn't scar me for life! ;)
 
It shouldn't have anything to do with the cocoa powder unless the person making it is just using wayyy too much. My recipe only calls for a couple of teaspoons of cocoa powder. My recipe is the same as my granma's and it is really moist. It's my favorite kind of cake but only if made properly with cream cheese icing. Buttercream or white just won't do. I hate when people put nuts on the frosting though. It really does seem like its trendy right now which is funny because I know where I'm from in the south its as old as dirt and very southern, even though some claim it was invented at the Waldorf Astoria, my granny swears it's a southern invention. LOL!

Hmmmm the only time I've ever had heavy red velvet cake is if it was made wrong. It should be extremely moist and fluffy.:goodvibes

Junior's Red Velvet is pretty awesome! had some the last time I was up that way after seeing Xanadu!
