Recipes Wanted: Ball Cookies

It's that time of year, and I'm ready to bake!! However, I have a 4yo dd princess: that will want to be smack dab in the middle of whatever I'm doing, soooo I thought "ball" cookies may be easiest for her to help with! If you have any great ball cookie recipes (peanut butter balls, rum balls, coconut balls, etc...) please share them here! :flower:

we love to make these:

Peanut Blossoms

INGREDIENTS:
1 (8 ounce) package HERSHEY®'S KISSES® Milk Chocolates
1/2 cup shortening
3/4 cup REESE'S® Creamy or Crunchy Peanut Butter (we use Skippy roasted honey nut creamy)
1/3 cup white sugar
1/3 cup packed light brown sugar
1 egg
2 tablespoons milk
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup white sugar for decoration

DIRECTIONS:
Heat oven to 375 F. Remove wrappers from chocolate pieces.
Beat shortening and peanut butter in large bowl until well blended. Add 1/3 cup granulated sugar and brown sugar; beat until light and fluffy. Add egg, milk and vanilla; beat well. Stir together flour, baking soda and salt; gradually beat into peanut butter mixture.
Shape dough into 1-inch balls. Roll in granulated sugar; place on ungreased cookie sheet.
Bake 8 to 10 minutes or until lightly browned. Immediately press a chocolate piece into center of each cookie; cookie will crack around edges. Remove from cookie sheet to wire rack. Cool completely.
 
I've got a recipe for one...can't remember the name, but has crushed vanilla wafers, orange juice and sugar...it's my BIL's mom's recipe..nice and tart...think it's rolled in coconut...but not required. I'll look for the recipe and post it when I find it...it's just buried in the recipe file. My sis used to let her boys make these when they were very young for the exact reason you're wanting recipes.
 
I knew that I had one...sorry it took me so long to post...had my dad and MIL in the hospital for procedures this week. Here it is...

Vanilla Orange Cookies

1 lb. vanilla wafers, crushed
2 sticks butter, softened
1 lb. confectioner's sugar
1 6oz. can frozen orange juice, thawed
1 pkg. coconut

Cream butter and confectioner's sugar.
Add in crushed vanilla wafers and orange juice.
Roll into balls.
Roll the cookie balls in the coconut.
Put in the fridge for storage.

Note: If you don't like coconut, you can skip that part. Or if you want you could roll them in something else that would go well with the tartness of the orange juice.


Like I said...it is a super simple recipe. My nephews were making these at 3 and 5 and having a ball...no pun intended.
 

Aunt Anna's Butter Cookies

1/2 c. butter
4 T. shortening
1/2 c. confectioner's sugar
1 T. vanilla
1 T. lemon juice
1 egg yolk
2 c. flour
1/2 t. salt
Your favorite jam

Bake at 325 for 25 min. Cream butter with shortening & sugar beat until fluffy. Add vanilla, lemon juice and egg yolk beating until well blended. Sift flour and salt adding gradually to the creamed mixture. Beat until smooth. With hand shape into small balls, flatten slightly and make indentation in center and place 1/2 t. of jam in indentation. Bake until slightly brown.
 
Here's a sugar cookie recipe that I absolutely love. These cookies taste wonderful and they're so easy to make. Usually, I roll the balls in colored sugar (red and green for Christmas; pastels for Easter; etc.) before flattening them a bit with a glass. I hope you enjoy them as much as we do.

Best Ever Sugar Cookies

1 c. oil
1 c. butter
1 c. sugar
1 t. baking soda
4 1/2 c. flour
2 eggs
1 c. powdered sugar
1 t. cream of tartar
1 t. vanilla
1 t. salt

Cream sugars and butter. Add eggs, oil and vanilla. Then add dry ingredients. Chill dough overnight. Make little balls and flatten with small glass. Bake on greased cookie sheet about 10-12 minutes at 375.
 
Here's another good recipe. I hesitated posting it, because I think probably everyone already has it, but just in case . . . (This is the first recipe I ever made with my kids, years ago.)

Snickerdoodles

1 c. shortening
1 1/2 c. sugar
2 eggs
2 3/4 c. flour
2 t. cream of tartar
1 t. baking soda
1/2 t. salt
3 T. sugar
3 T. cinnamon

Mix together shortening, 1 1/2 c. sugar, and eggs thoroughly. Sift together flour, cream of tartar, baking soda, and salt and stir in. Chill dough. Roll into balls the size of small walnuts. Roll in mixture of 3 T. sugar and 3 T. cinnamon. Place 2” apart on ungreased cookie sheet. Bake 10 minutes at 350° until cookies are lightly browned, but still soft.
 
Another more special cookie. . . You'll want to hide some of these in the freezer for yourself; otherwise, they tend to disappear.

Peanut Butter Cup Cookies

Filling:
1/2 c. peanut butter
1/4 c. powdered sugar

Cookie:
1/2 c. firmly packed brown sugar
1/4 c. sugar
1/2 c. margarine, softened
6 oz. cream cheese, softened
1 t. vanilla
1 egg
2 c.flour
1/4 c. cocoa
1 t. baking powder

Frosting:
1 c. sifted powdered sugar
2 T. cocoa
1 to 2 T. milk
2 oz cream cheese

In small bowl, combine peanut butter and powdered sugar; blend until smooth. Chill while mixing cookie dough for easier handling. Heat oven to 350 degrees. Grease cookie sheets. In large bowl, cream brown sugar, sugar, margarine and 6 oz cream cheese until light and fluffy; blend in vanilla and egg. Blend flour, cocoa and baking powder into creamed mixture. Shape dough into one-inch balls; place 2 inches apart on prepared cookie sheets. With thumb, make imprint in center of each cookie; fill with 1 tsp filling. Bring dough around filling to completely cover. Bake for 9 to 12 minutes. Cool. In small bowl, blend frosting ingredients. Spread over peanut butter cups. Makes 3-1/2 dozen

I love Snickerdoodles!! I use the red & green Christmas sugars plus some white sugar to roll the cookies in.

Last night we made the "cake mix cookies" that I've seen posted here...used the yellow cake mix with 1/2 bag of Heath bar. They were super good and very easy! Gotta love that "easy" stuff, having a 4yo around! :rolleyes:
 
Momsgoofy... Just curious if you HAVE to keep the cookies refrigerated? :confused3

Well, I suppose that you should considering it has butter in the cookie. But I know that when I've made them I keep them in an airtight container and leave them in my garage...it's where my laundry is and isn't heated so it gets pretty cool in there. The butter would be the only reason I could think to keep the cookies in the fridge. The cold does help the cookie "set" better, but my granny always kept butter on the table when I was a kid. So, just use your best judgement...store them in a cool place I'd say.

that's a great idea! I also use this method for Peanut Blossoms during the holidays! :)
