I have the best energy bar recipe. My kids love it!!
1 cup honey
1-1/2 cup crunchy peanut butter
1 cup powdered milk
1 tsp vanilla
Mix the honey and peanut butter in a microwave save bowl. Heat until bubbly (very important). Remove from microwave and stir in the powdered milk and vanilla.
While the honey and PB are heating up in a VERY large bowl mix:
1/2 cup raisins
1/2 cup chopped dates
1/2 cup dried berries (whatever kind you like)
1/2 cup chocolate chips
4 cups crisp rice cereal
3 cups Bran Buds or like high fiber cereal
1 cup rolled oats
Mix this all up and then dump the PB mixture over it and stir to coat everything. Grease a 15 x 11 jelly roll pan and press the mixture into it. Cut into 24 bars and put the pan in the fridge to cool. When the bars are cooled and stuck together you can separate them and enjoy. These can be frozen and work well that way in a school lunch or packed on hikes/bike trips.
