Recipe question ... will this work?

I was going to make a pork butt in the crock pot with a balsamic BBQ sauce. I went to make the sauce and saw that I only had 1/2 cup of balsamic. Since I was already out this morning I decided not to run back to the store. Instead I threw the pork in the crock pot with most of a bottle of sweet baby rays and the 1/2 cup of balsamic. I have it on low for about 6 to 6.5 hours before it time to eat it. I don't want it completely pulled pork tender but close.

I should be ok right?
 
I'm not sure. I'm going to have to come over and try it out- I'll let you know if you have succeeded. :)
 
My concern would be in getting too much of a vinegar taste in your sauce. How much balsamic bbq sauce did it call for?

As vinegar cooks, it generally just works as a tenderizing agent to meat...but I've tasted meat that was just a little off because of too much vinegar.

About 1 hour before you're ready to serve that, I would go back and take a taste of the sauce to be sure the mixture wasn't too vinegary (<---is that a word? :rotfl: ) and add either more BBQ sauce or brown sugar to offset that flavor.

Don't taste it too early. You might get sick from raw pork.
 
A half cup of balsalmic isn't very much. You've actually given me a great idea that I'll try, too. I often times use Sweet Baby Rays on pork in the crock pot. I never thought to add balsalmic to it. I'll do that next time.

Besides, balsalmic is sweet and not very vinegary to start out, so I think you'll be fine. I'm the type of cook who always does weird things in the preparation of food and it always turns out tasting great... recipes are just a guideline, not a requirement.

That is my concern as well. I only put 1/2 cup in because that is what I had. The orginal recipe called for a 1 cup of balsamic along with the rest of the ingredients to make BBQ from scratch. I didn't bother with the BBQ sauce from scratch since I had almost a full bottle of Sweet Baby Rays in the fridge. I put in almost the entire bottle, but it was one of the smaller ones. I think it will be ok ... I'll taste it later and if it's too strong, I'll fix it then!! :-)

What would you serve with it? I was thinking either roasted red potatoes or garlic mashed red potatoes!
 
I'd go with the roasted red potatoes unless you're craving the garlic mashed. I like the crispiness of roasted or home fried potatoes with BBQ pork.

I bought what is pork "picnic" which I'm told is what I should use in the crock for pulled pork. Okay, thought I found a recipe and now can't find it anywhere. I want to do pulled pork bbq sandwiches.

What else should I be throwing in the crock along with the pork to do this? I bought a bottle of bbq sauce but what else? I'm new at this sort of thing.

That's all you need. That's all I usually do and it comes out delicious.
 
Just the pork and BBQ and you are good to go!

I asked the meat department manager what I should get and she recommended the Pork Butt over the picnic. I have no idea what a picnic is ...
