Hi fellow DISers!

I have been looking on the Internet for some good ideas but I thought why not ask the DIS who always have great ideas! :-)
I want to make a creamy pasta sauce, similar to Alfredo, but without the calories from cream. Any ideas on a good and tasty substitute?

Laughing Cow Alfredo Sauce

Number of Servings: 2

Ingredients

3 wedges Laughing Cow Light Creamy Garlic & Herb
1/2 cup Skim Milk
1 Tbsp reduced fat Parmesan Cheese
1/2 Tbsp Molly McButter
1/2 tsp Garlic Powder

Directions

In medium sized saucepan, combine all ingredients over a low heat, until everything is melted and is velvety smooth (approximately 20 minutes). Serve immediately over hot cooked pasta of your choice (recommend a whole wheat spaghetti. Remember to add in the calories of your pasta coice).

but I make this. Still healthier than anything you would find in a restaurant or in a jar. Anytime we have any other alfredo the kids comment that they like this better.

melt 2T butter in a saucepan. Stir in 1c 1/2 and 1/2, 1/4t nutmeg and pepper. Cook and stir for about 5 minutes. Then stir in 1/2c parm cheese. Cook/stir until melted.

I imagine it would be fine w/skim milk too.
 
I always used canned evaporated skim milk to make "cream" sauces. They cook up nice and thick, but the calories are greatly reduced.
 
These recipes are great! I'm going to attempt to make a gnocchi dish and hopefully the cream sauce will taste great with it!
