I usually cheat. I open a jar of Ragu's Roasted Garlic white sauce, toss in a bag of salad shrimp & serve over fettucine with grated Parm and freshly ground pepper.
I used to use this recipe for the sauce, but just tossed in the shrimp same as above.
Noodles Alfredo
8 oz wide egg noodles
½ c butter
½ c milk
1 c grated Parmesan
1 Tbl parsley flakes
½ tsp salt
dash pepper
Cook noodles & drain. Heat butter & milk over low heat. Stir in cheese, parsley, salt & pepper. Pour sauce over noodles & stir until coated. USE LOW HEAT!!
Here's the Olive Garden's Alfredo Sauce. I haven't tried it yet, but I'm guessing that the cream cheese is what makes it thick & creamy.
Olive Garden Alfredo Sauce
1 pint Heavy Cream
¼ lb butter
2 Tbl Cream Cheese
½ - ¾ c Parmesan cheese
1 tsp Garlic powder
In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 - 20 minutes on low. You may wish to season with a little salt and pepper.
Then there's this one if you really want to do it completely from scratch.
Shrimp Fettuccine
¼ lb butter, divided
2 Tbl vegetable oil
5 green onions, chopped
2 c sliced mushrooms
2 cloves garlic, minced
1 lb raw shrimp, peeled
2 tsp salt
8 oz fettuccine
¾ c grated Romano cheese (or less)
¾ c Parmesan cheese
1 c heavy cream
¼ c chopped fresh parsley (can omit)
Heat 4 tablespoons butter and oil in a large skillet. Add onions, mushrooms, and garlic and sauté. Add shrimp and sauté until pink. Pour off excess liquid and season with salt. Cover and keep warm. Cook fettuccine in boiling salted water and drain. Melt remaining 4 tablespoons of butter in a saucepan. Mix in fettuccine, cheeses, and cream. Combine with shrimp mixture. Sprinkle with parsley and toss. Serve immediately. Serve with salad and Garlic Bread. Yields 4-6 servings.
