Recipe for inexpensive Rice and Beans

I have been following the $10 challenge thread and keep seeing rice and beans on the menus. I have no idea how to make them. I have had them at restaurants, but that's it. Any one have any great recipes?

This is the ultimate in thriftiness and convenience - beans in a slow
cooker. The long, slow cooking time coaxes all the flavor from the sausage into
the
beans for a mild yet full-flavored dish. You can also cook in on low heat
for 8 hours.

3 cups water
1 cup dried red kidney beans
1 cup chopped onion
1 cup chopped green bell pepper
3/4 cup chopped celery
1 teaspoon dried thyme
1 teaspoon paprika
3/4 teaspoon ground red pepper
1/2 teaspoon black pepper
1/2 (14-ounce) package turkey, pork, and beef smoked sausage, thinly sliced
(such as Healthy Choice)
1 bay leaf
5 garlic cloves, minced
1/2 teaspoon salt
3 cups hot cooked long-grain rice
1/4 cup chopped green onions

Combine first 12 ingredients in an electric slow cooker. Cover with lid;
cook on high heat for 5 hours. Discard bay leaf; stir in salt. Serve over rice;
sprinkle servings evenly with green onions.

Yield: 4 servings (serving size: 1 cup bean mixture, 3/4 cup rice, and 1
tablespoon green onions)
 
I too am going to try the slow cooker version. My recipe is also easy, delicious and inexpensive if you buy on sale or with coupons.

I make the Zataran's (sp?) Red Beans and Rice per the box directions. And then I add sauteed onion and turkey sausage. You can also add a small can of tomato sauce and/or tabasco sauce (we prefer green) if you want.

I can find the box on sale under $1.50 quite often, and there are also sometimes coupons out there. I buy the cheapest turkey sausage unless I'm dieting.:goodvibes You can make this for about $3-$4.

oh, I have a recipe! It's one of our family's favorites and VERY cheap and easy to make.

1 cup long grain brown rice or white rice
2 teaspoons chili powder
1/2 teaspoon salt
1/4 teaspoon each oregano & cumin & garlic powder
2 tablespoons dry onion
Dash red pepper flakes

1 or 2 tablespoons oil
8 oz can reduced sodium tomato sauce
1 can chili beans
2 cups water

The way I make it, is to use brown rice, mix all of the ingredients in a 2 quart casserole dish, and bake in the oven for 2 1/2 hours at 300 degrees.

It has 1160 calories in the entire dish, if you care to know that sort of thing.

The original directions state:

Get out a 2-quart saucepan. Heat the oil in the pan over medium heat. Add the contents of the Taco Rice Mix. Sauté the rice and seasonings in the hot oil until the rice is toasty and slightly opaque. Add the tomato sauce and water. Stir it up and bring it to a boil. When it starts to boil, cover the pan with a good lid and reduce the heat to very low. Brown rice will cook in 45 minutes. White rice will cook in 20 minutes. Serve topped with cheese for a main dish, or just like it is as a side dish.

This dish is suppose to serve 4, but it is perfect for our family of five, as a main dish.

--a side note, I could NEVER get the brown rice to cook on the stovetop.. that's why I started using the oven method. White rice cooked great on the stove top though.
 
For New Orleans Style Red Beans and Rice:
4 cups water
1 lb dried red kidney beans
1/2 stick of butter (not margarine)
1 cup chopped onion
1/2 cup chopped green bell pepper
1/4 cup chopped celery
1/4 cup chopped green onion
1/8 cup chopped fresh parsley
4 cloves garlic chopped
1 bay leaf
1 tbs (or less) may be too spicy for some! Cajun Spice (like Zataran's)
1 tbs (or less) again adjust for your own taste! Hot Sauce (Tabasco)
1/2 lb smoked sausage - sliced
1/2 lb pickle pork (may be a regional thing) or ham seasoning - cubed
Salt to taste*

3 cups cooked long-grain rice

Soak beans in cool water for 2+ hours
Drain and set aside

Cook on the Stove Top!

In a 5 qt. Stock pot sautee vegetables in 1/2 stick butter over medium heat until the vegetables are soft. Add the meats and sautee one additional minute - do not brown. Add the beans, water, cajun spice and hot sauce. Bring to a rolling boil then reduce heat and simmer for 2 - 3 hours. Stir occasionally! Beans will be ready when they are really soft. Salt and pepper to taste. *Please do a taste test before adding adding salt - the ham (or pickle pork), sausage and the cajun seasoning all contain salt.
**for extra creamy beans** (optional but this is my family's favorite!)
Once the beans are ready remove approximately 1 cup and smash them! Return the beans to the pot and add the other half of the stick of butter and cook for an additional 10 minutes stirring regularly. Serve over rice with french bread.

Not just rice and beans but yummy nonetheless! My friend Mary makes it for potlucks and she always goes home with an empty dish-

3c cooked rice
1/2c-1c cottage cheese
1/4-1/2 cup plain yogurt or sour cream
1 bunch scallions
1 small can chopped green chiles
1 1lb can kidney beans
1c grated cheddar cheese
seasonings to taste - salt/pepper, Mexican seasoning

mix all ingredients together and turn into lightly buttered casserole dish. These amounts fit 9x13 lasagna pan. Bake at 325 for half hour.

Zatarains...........can get 10 boxes for 10 a lot of times at Kroger. I love the jambalaya (add chicken, sausage of you want) and the dirty rice (can add beef) and the red beans and rice (can add sausage) Perfectly seasoned and yummy!!
 
I am a "simple" cook, so here's my rice and beans.........Cook some rice, add butter, salt and pepper to taste. Add a can of rinsed and drained black beans. Stir. Yummy!
 
from what I've learned, rice and beans is unique to various families-there are many ways to do it- I have 2 different recipes-here's my favorite-
2c Goya white rice
3 1/2 c water,
1 tbsp.olive oil,salt and pepper
bring to boil, immediately turn down(way down) heat,***Lay a paper towel on top of pot,cover tightly with lid,and let cook for about 20-25 mins.
for beans-
in saucepot, 2 cans kidney beans,
1 can corn-
1 packet Goya sazon y achiote(or Badia brand, I prefer one w/out Msg)
3 tbsp Goya sofrito(it's red)
(3 tbsp Goya recaito( I use this only if I can't find the following)
*3 tbsp fresh green sofrito,sold in stores in the produce section anywhere there's a hispanic population-)
3 tbsp. spanish green olives can add a bit of liquid from the jar
8 oz can Goya(or whatever) tomato sauce
8 oz of water-
couple shakes cumin
let simmer while rice cooks...
serve w/ shredded cheese or sour cream....yum! you just scoop the beans over some rice...the rice comes out perfect this way!
once you make it once, and keep the (cheap) ingredients in the cupboard,dinner is quick and easy!
you can add leftover meat to this,but you don't have to...
 
Here is one more easy one............cook rice. add salsa, mexicorn, and black beans. (you can add pre-cooked chicken if you want). can be topped with cheddar, sour cream, or scooped up with tortillas. pretty authentic mexican taste. yum!
