we've all been there, you have something in the fridge or freezer you want or need to use up, but off the top of your head you can't think of a recipie that goes with the ingredient. the result is something you kind of make-shift, sometimes to a disasterous result-sometimes to such success it becomes a standard recipie in your home.

let's hear yours and how it was born, i start with mine.


i had bought one of those whacking big bags of baby multi color bell peppers at costco. we used them allot during the summer in salads and grilling, but when the weather turned cold i completly spaced that i still had a 3/4 filled bag. i came across them and hating to waste stuff i rattled my brain for something to do with them.

the result was a stuffed bell pepper inspired casserole. i took the baby bells, cut off the tops and the tips then split them length wise. i made up the traditional pepper stuffing (rice, seasoned groundbeef) and the tomato based sauce. i took stuffing and peppers (did not precook or parboil like some traditional pepper recipies call for) and did them layer style in a casserole dish (actualy made multiple casseroles since i had so many peppers). layered in some tomato based sauce, covered it with foil and baked-with the last few minutes having the addition of mozzerella and parmesan on the top.

it was great! tasted just like the tried and true recipie, with the added benefit that those in my household that like the taste of stuffed peppers but wont eat the actual bells being able to take a serving, but before eating it easily being able to spoon the pepper sections back into the serving dish (for those of us who relish um).

definatly a recipie that will become a regular in our house.

Occasionally our fast, guilty pleasure dinner is Trader Joe's frozen gnocchi in sauce to which I add in some shrimp & some fresh baby spinach leaves.

Sometimes I would add the leftover spinach leaves into a salad, but once I was making a pot of turkey meatball soup and had the brainstorm to throw in the spinach leaves. We all liked it so much I've started using spinach leaves in several types of soup I make.
 
Anything I can do with some sour milk? Didn't finish the last of it and hate to dump it down the drain..:(

If it has just turned sour and not all the way clabbered you can use it in baking as a substitute for buttermilk. My late father would not waste a thing. He did that often.

LOL, I think it means sour but not chunky!

Oh - thanks.. Just sour - starting to get that little ring around the inside of the plastic jug..

If we had milk that had started to go sour in our house, my mother always used it to make biscuits.
 
Clabbered means it is really starting to get thick and lumpy. At that point I am not comfortable using it. It might be okay, but that just goes over my personal comfort level. My dad decided that maybe he could make his own buttermilk by doing this and left some in the refrigerator for about a month. It was pretty gross.

Biscuits and pancakes are two easy ways to use sour milk. Probably anything where you cook it would be okay.
